This recipe is about to change your view of beans regardless of whether you are their fan or not! These tacos are a great dinner choice everyone can agree on — healthy, super easy, crazy good and bursting with flavour!
In a medium saucepan bring together black beans, salsa, chili powder and cumin. Let the mixture simmer for about 5-10 minutes, stirring occasionally. If desired, slightly mash beans.
Blend the avocado, Greek yoghurt, lime juice, garlic and cilantro in a food processor. Pulse until cilantro is finely minced. Then, season with salt and pepper. Add a tablespoon of water if required to make your sauce thinner.
Brush tortillas lightly with olive oil and place in a skillet over medium — high to medium heat. Cook, flipping once until golden brown spots appear on both sides.
To make tacos, layer the following on each tortilla: black bean mixture, avocado-cilantro-lime crema, lettuce, cheese and tomatoes. Serve right away!
