Pasta puttanesca

Method

Bring a pot of salted water to a boil, add the pasta and cook according to the package instructions.

Heat the oil in a large pan, add the anchovy paste, garlic and red pepper flakes and cook over medium heat for 1 — 2 minutes, stirring constantly.

Coarsely chop the tomatoes and add them to the pan. Then, season with salt and pepper to taste.

Combine tomatoes and olive oil mixture. Bring to a simmer and cook for 8 —10 minutes, carefully stirring occasionally, until tomatoes have broken down and formed a sauce.

Stir in the capers and olives.

Drain the pasta, then toss with the tomato sauce. Garnish with parsley, serve and enjoy!
